I was on a website that sells stag and the European red stag was less than half the price of sambar, What is the difference between these two?
 
Red deer antler has a much thinner wall. Farmed stuff is the worst, as little as 3/16 before you hit pith. This is really only a problem if you intend to use it as scales on a full tang. The pearling has a lot more pop corn to it compared to Sambar. Hope this helps, don't be put off using it.

The smoother texture is an advantage when making smaller knives. The rougher texture of Sambar can overwhelm a small knife.

The hard shell is also much whiter than Sambar.

I use Sambar on larger Bowie styles and Red deer on smaller fixed blades and folders.
