I've been assaulted at least a dozen times. I grew up very poor, worked in bad areas, do some civil service work with the deputy's, and traveled/travel a lot. When you find yourself in a life-threatening situation your reactions will reflect your general mindset. You play like you practice, basically. Are you vigilant? Do you dislike violence? Do you practice martial arts or basket weaving? Etc. If you did not practice, prepare, or experience it, chances are you will perform poorly in such a situation.
Most persons first reaction is "Oh my god he's got a gun/AK-47/machete/knife/sharp stick!". Your first reaction should be "What can I do to quickly take advantage of the situation and resolve it with minimal risk and damage to myself and the lives of others". Until that is your first reaction, the criminal will always have the upper hand.
Having said this - I do what I can to avoid a knife fight(or any fight). Why? Because knife fighting is not fighting - it's combat. Once both of you, or more, decide to use blades against one another, chances are good one of you will die. Now, compare this to an armed response. In the 4 times I have had to display a firearm, I never had to fire a shot. A stern warning and a firearm was all that was needed to cause the attacker to back down or leave. This is infinitely more effective than any knife.
One time in central Texas I was confronted by 3 huge(or they SEEMED huge at the time) white supremists(I am Cherokee Indian). Turns out they brought bats to a gun fight. This helps to shine light on another point - if you are in a knife fight - assuming you are both similarly skilled, you are in a fair fight. As a Texas Sheriff friend of mine likes to say "A fair fight means poor preparation on someone's part".
As for the laws - those with confidence, self respect, and responsiblity rarely cry to their politicians/keepers for help. Thus, the laws tend to reflect the protective need of the weaker members in our society. While criminals generally get their comeuppance in Texas, one can understand how some yankee states are more afraid of hurting the innocent than punishing the guilty. No system is perfect, you have to assume some innocents will get hurt in the process of punishing many whom deserve it. Otherwise, you will paralyze any system, and make it ineffective.
