Any of those steels would do well if done properly...lots of great makers have had great success with all of those steels.
I would be more concerned about the maker's familiarity with it. I would ask them about the geometry (how thick is the edge, edge angle, primary grind type...if they're putting a 20dps, .060 edge on it the the steel don't matter a lot at all), and then I would ask them about it's performance. What have they done with it? What limits have they seen? In that discussion I would explain your uses and see how they feel about them.
