I have a couple knives that have been hanging out too long and need to get moved out.

from top to bottom:

240mm 1084 gyuto - Black Micarta western handle
60mm tall at the heel
2.3mm thick at the heel not much taper
350 grams balances 28mm from the handle

Price - $280

240mm 52100/Wrought San Mai Gyuto - Bubinga and cocobolo handle
47mm tall at the heel
2.1mm thick at the heel 1.8mm thick at midpoint
200 grams balances 25mm from the handle

Price - $375

258mm W2 Gyuto - Ironwood and Horn w/ Stainless spacer
48mm tall at the heel
2.1mm thick at the heel 1.9mm thick at midpoint
240 grams balances 18mm from the handle

Price - $375


261mm w2 Gyuto - Cocobolo and Tan Micarta handle
55mm tall at the heel
2mm thick at the heel 1.8mm thick at midpoint
250 grams balances 32mm from the handle

how are the blade lengths measured ? cutting edge length or tip to handle including the machi ?

i really dig the slender shape of the san mai one but if it's 240 tip to handle it may be a hair too short.
