yes, you can convex the ESEE - as to whether or not it will improve performance, that will depend on how you use the knife.

I just got a worksharp knife sharpener and have put a convex on 2 of my knives now and it has really helped the performance of them so what ever i get will definately get a convex edge! What about the ontario sk5? How dies it compare to the fallkniven and esee?

I've used the F1 extensively for a number of years, as well as have played with the other two on occasion and there's definitely a good case for all three depending on what you like or what you intend to do with it. but if it's a hard use blade that you're going to hack and pry with, it's the F1 for me, for slicing and prep the ESEE, and the CS is just a pretty good all rounder for the money.

Otherwise definitely an F1.
