Buck 110 has a long history of performing all the tasks mentioned.
The current standard 420HC blade does not need any fancy sharpening stones. Arkansas stones (or a smooth river rock) work just fine.
If you want a fixed blade, choose one of the Buck 100 series.
The 102, 105,
maybe the 118, 120, and 119 are probably the most popular. The 119 has been Buck's most popular fixed blade for over 15 consecutive years now, from what they told me a month or so ago.
Alternates would include a vintage pre-2004 made in USA Old Timer 7OT (1978-1982 some were made with 1095 blades) 6OT (all were/are "Schrade +" 440A prior to the late 1990's or 420HC from the late 1990's until Schrade went under in 2004. The offshore made have 7CR17MoV "440A equivalent" blade steel.
Schrade/Old Timer 152 "Sharp Finger" Pre 2004 did have carbon steel blades as well as "Schrade +" options. You can find both on the secondary market ... at a considerably higher cost than when new, of course.

Current overseas production Schrade/Old Timer has 7Cr17MoV blade steel. (some, like the Old Timer "OTB" line have 9CR18oV 440C equivalent blade steel. The Imperial line has 420J2, at least in all the folding knives.)
Note that none of the overseas production Schrade/Old Timer/Uncle Henry folding knives have the daRn Swendon Key construction.
From my experience, the offshore Schrade/Old Timer are "just as good" (lacking the Swendon Key, they may be better in the long term) as the USA made,
and they have a warrantee BTI stands behind them, and honors the warrantee.
They replaced my 23OT 4 blade Scout Knife, No Questions; No Hassle; No Postage, after one of the rivets for the bail went A.W.O.L., a month or so ago.
A two blade slipjoint Folding Hunter, such as the Marbles MR417 or Old Timer 25OT. (4 inch blades. Marbles has 440A, OT the 7CR17MoV stainless steel. For a bunch more money, you can find one by Schrade USA or Case on the secondary market with carbon steel blades.)
Full Size (4.25 inch closed) Moose pattern, or Trapper (4.125 inch closed) or a stockman ("large" 3 7/8 to 4.5 inch suggested) if you want something that will fit in your pocket.
The Trapper and vintage Folding Hunter's, and I think the current production Boker (and if Case is making one currently, I'm not sure if it is "in the vault") are available with single blade.
Personally, I prefer the two blade Folding Hunters with a clip point and drop point blades, and two blade clip point full length Spey/Skinning/ Budding secondary trappers.
