I really like the Kershaw/Ken Oinion Leek - it is right-sized for me and extremely fast and convenient - it's my at home EDC.

Although the American 440A steel is not generally regarded as exotic or premium, it is very stain resistant, and works well as a general purpose blade steel.
For example I have had mine for well over 3 months of EDC use and the only maintenance I've done was to twice strop the blade. Once was "legit" after about a month I saw a shiney flat spot near the belly and stropping brought the edge back pretty quickly - the second time was because I could, and wanted to
