This is a chef knife with a lot of Japanese style features- I don't call it a gyuto because I'm not Japanese; likewise the measurements are listed SAE.
Steel is 52100, forged from a bearing, normalized, ground, triple normalized, single quenched in Parks 50, tempered twice at 2 hours apiece. Not soft back drawn.
This chef features a mortised Wa-style handle in natural canvas/black linen Micartas. It's light for it's size, wide at the heel for tons of knuckle clearance and the ability to pick up a lot of chopped food, and features a tall thin full flat grind for great slicing ability.
The edge has a long nearly straight section from the heel to midpoint for lots of board contact, then sweeps up in a mild rocking curve to the point. More of a French profile than German.
Spine and heel are well rounded for comfort. Blade is hand sanded to 600 grit.
Specs are as follows:
.125" max spine thickness
.010" edge before sharpening
2-3/8" blade height at heel
9-7/8" blade length
14-1/8" overall length
4" handle length
Handle is 11/16" thick at bolster, tapering up to 1" max at butt.
Balances at "O" of trademark.
