My favorites would have nothing to do with the knives themselves but rather with the manufacturer's ability to keep the distribution channel in stock in a timely and accurate manner. A few standouts in this area would be Kershaw, Victorinox and Mac Cutlery. Kershaw and Victorinox are industry giants and Mac is a relatively small importer that does an outstanding job at what they do. These three are well managed companies that blow most of the others away in terms of their ability to keep the pipelines filled. I think they deserve some praise from the dealer end of the equation.
In terms of personal knife purchases I tend to prefer Spyderco and Case which I collect. I like the Fallkniven knives personally for fixed blades but I only have a couple of them and don't view them as a collection.
Spyderco for the Military and the various ZDP offerings.
Boker's CLB line for the MType. I love the thing.
CRKT, for the sole reason they gave me my beloved Ringed Razel. (not for their tendancy to chisel grind and add the horrid autolawks tragedy, and the steel... eww.)
I'd say Kershaw but I HONESTLY haven't been blown away by anything, and I do have a few. My Leek and Skyline are nice but nothing spectacular in my eyes. Remember, thats MY most humble opinion. *puts on flame suit*
