I almost forgot a great one. Robert Heinlein's Tunnel in the Sky. While not an end of the world scenario, it deals with being shut off from civilization and having to not only survive but to forge a society to deal with the inevitable issues that arise within a group.

It's listed as one of Heinlein's Juvenile novels, but it makes for great reading at any age.

I've been hooked on the S.M Stirling's series that starts with the book Dies the Fire. The books are good reads and most of their survival techniques seem fairly realistic. Haven't tried grinding my own sword out of a leaf spring yet, that's coming down the road.

These are extremely good. He has a related series in which the island of Nantucket is transported back in time. Similar problems faced by the protagonists.
