Because of the quirky knife laws here in Califonia, I don't normally carry a fixed blade knife, as it tends to be more hassle than it is worth. But when I do carry one, I have three that I like for different reasons. For just plain hunting, I like my plain old vanilla Schrade long finger 152 (I think that is what it is called). It is reasonably sharp, stays sharp through dressing game, and was inexpensive enough that I use it often. If I am expecting to be dressing something larger than a deer, or possibly more than one large critter, I use a Russell Green River 2212. Again, because it works, holds an edge, and was cheap enough that I am willing to use it. The last knife is the one that I would carry if TSHTF. It is a Dawson hunting knife with a beautifully shaped 440C blade and green micarta handles. The problem with it is that unless it is absolutely needed, I can't bring myself to use what is essentially a work of art for something as mundane as chopping up deer and hogs. The same could be said of any of my knives by him, his niece, or her husband. They are great knives, but they are worth more to me as art than as functional knives. I will try to post pictures of some of them as soon as I figure out how to.
