Iv'e also had my fill of G-10 for a while. I'll take Micarta or Carbon Fiber for a user and Black Lip Mother of Pearl for something a little more fancy. That stuff is SWEEEET!
For beauty, no manmade material can stand up to a natural material. My favorite is ivory/mammoth...you can actually see it age. Most woods age and get better with use, except my favorite, desert ironwood. It doesn't need aging.
I really like the kevlar reinforced kydron Emerson uses on his Ravens. I haven't seen it on any other knives (somebody tell me if I'm wrong), but I wish more makers would use it, as I'm not too wild about Emerson's blade grinds. It has a nice warm grippy feel without being too soft. Perfect. The ravens come in colors, but I still like black the best. Check the emerson FAQ and search for Kydron for more information. http://www.emersonknives.com/faq.htm
I have a Case pocket-knife with curly Maple scales. Beautiful! It's like owning something from a better time, if you know what I mean. I also have a Camillus Yello-Jaket trapper because the yellow delrin handles are just so pleasing. I like the Case yellow knives too.

I vote for : anodized aluminium
In my opinion this is the best choice for
a daily used knives. It is not so beautiful
like bone or wood but it has strength and
solid (non-slip) grip.
And it is cheap!
Bye.
