Favorite knife to fiddle with

That Biro pen thing is called a Bali-Yo. Like Balisong Yoyo. It is a balisong pen essentially. I believe Spyderco is connected to them somehow. They are legal anywhere pens and writing are legal.
 
My favorite fidget knife is a Spyderco UK Pen Knife.
One hand opening and closing like crazy while watching TV.

Any of my non-assisted Axis lock folders - 707, 484, 940, 950, CR.
The smaller Axis lock folders are most easy and fun to fiddle with, the 484 in particular. Hold it horizontal/edge down, give the Axis lock a quick pull and release, the blade swings freely down and the detent is well positioned to grab and close the blade. Flick open and repeat :D

Para2 for sure, the compression lock is so versatile and usable.
Manix and Manix XL, though the XL needs the deep carry clip not just for more comfortable carry but also to grip with the fingers for one hand closing - the handle is pretty big.

Flipper, the ZT 0452CF, strong detent - that 4" blade really fires open. But the fiddle fun factor lessens with closing it.

Assisted, the BM790, it leaves you in no doubt it's assisted when it opens and is the easiest one handed closing frame lock I have.

I often play with my Kershaw Strobe when i need something to fidget with. Mine smoothed out very nicely and the blade almost drops closed under its own weight.

I was really enjoying it... then the entire lock bar sheered off at the relief. I DO NOT recommend taking the plastic scales off. They function as the overstravel stop, and the frame is some cheese grade steel.

I would agree with several others that whatever knife is at hand is bound to get fiddled with. A current favorite flipper fiddler, though, is my Shirogorov Hati.

The 95T has been described as the "Sebenza of flippers". I do indeed love my Turtle-- it has amazing flipping action, and closes under its own weight, but the Hati is much more CRK-like to me. Running on PB washers, it flips nicely but in an altogether more polite manner. Closing is absolutely butter smooth with some of that hydraulic Sebenza feel, but freer, easily closing with an index finger flick.

The heavy duty version comes with a Fisher Space Pen cartridge. The lightweight has some cheaper variant. Both are compatible with standard Parker refills (I think).

but for non balis my zt 452cf was my favorite, but I lost it :-(
Now I think my axis lock knives or a kwaikens probably the most fun to play with but, honestly I fiddle with most of them even the slip joints.
But I do have the GTC zt knife on pre order, i expect that to be my new fav for fiddling.

(balisongs are the best for fiddling as you can do tricks with them not just open and close the knife. I would suggest getting into balis if you can have them in your state) Unless your setting in a chair at a desk then balisongs are not super easy to play with...
 
My favorite to fiddle with is my CH3504. With its ceramic bearings, it is as much a joy to fiddle with as any Titanium framelock flipper. And it is relatively inexpensive, so I don't mind wearing it down. In fact, as much as I have sat here playing with it, it is still as perfectly centered and without play as when I first got it. It is also what I carry around the house as a beater. Its s35vn blade has sure gotten much use.
