favorite SAK steel series, or alternative?

Victorinox used to offer custom set up of your knife : choose the tools you want. Within limits, of course. Can't replace the corkscrew with a serrated blade. Duh.
 
The Swiss Army 7 has almost the same tools as the Farmer, with a curved pruning blade in place of the can opener. The Electrician has a short, straight edge for wire stripping in that location. Lacking the saw, it has only two layers, which I find much more pocket-friendly.

Isn't it micarta? I had my eye on that one, but the fork really turn me off. I hope that they have a better tool set.

For OP, Ruike makes some good knife based multi-tool, most are 12C27 with G10 scale.

As said above, they are not glued on, but friction fit on. Victorinox used to sell economic model with nylon scale, which turn out to be super durable and so they discontinued it. 3rd party scales might use glue.

Yes, the MKM Malaga 6 does have Micarta scales which have better heat resistance than G-10. I have to stop posting after my bedtime. M-390 is quite an improvement over 12C27 or 440.
 
I was REALLY tempted by those, but the fork is something I can’t see me ever using, so I had to pass.
You don’t go to enough cocktail parties where they run out of toothpicks for the hors d’oeuvres. The fork comes in handy at chain restaurants where all they have is plastic forks. The fork is also 1/2 of a “Hobo” set. If you find a spoon, you can run away from home.

If I could custom my own SAK style knife it would be...
- 3.5in when closed. To fit straight, not diagonal in an Altoids tin (Don't ask me why, I'm weird).
- Knife, Scandi
- Saw
- Scissors, because I'll dull my knife
- Plyers for easier not untying.

Why haven't manufactures spent more time developing customizable knives. That Malaga is a great looking example. Beautiful look, screw on scales. Why not bring the screw all the way through and allow the removal of pieces?
 
This came in yesterday, my first Alox SAK. I’ve always had the red plastic SAK’s and liked them, but I had no idea how much nicer these Alox models are. Everything on them is just better, so much so, that I will only buy the Alox versions from now on. They are well worth it and I haven’t seen or used anything that I would buy in their place.
