Favorite Steel in Each Category

Folder/EDC: M390/204P/20CV & Cruwear (runners up: S35VN, S110V & XHP)
Fixed Blade/Camp/Bushcraft: 1095
Kitchen: VG Max
 
In my experience so far:
Folder and EDC: S35vn or VG-10
Fixed or Camp knife: D2 or 440HC
Sailing Knife: H1 or VG-10
 
I used to care because I liked better edge retention but since I got a clamping sharpener I could care less. All steels are a breeze but to answer if I had to narrow it down from what I've experienced.

Folder/Edc: M390/204P
Camp: 3v
Survival: 1095
 
to me,

EDC knife --- H1, CTS-XHP
Camping and outdoors knife --- 14C28N, N690
Chopper --- 5160, good 1095
 
Based on what I have:

EDC folder/fixed - S35VN want to try M390
Bigger fixed - 3V is my top choice followed by 5160, A2 and 1095
 
I am going to add sandvik 14c28n as my top steel for folders with m390. When i know i am going to use my knife a lot, i have typically grabbed for the delica or the leek because they hold good edges but will be easy to sharpen when i am done. I had always preferred vg10 over 14c28n. To me they were always similar. But after i did a cut test, the leek beat the delica in the one category that i always considered the delica better in: edge retention. The edge is quite a bit thinner on the leek, but that is why i have always liked it so much for cutting. i always choose my leek over my delica for whittling sticks. However, i have always preferred the delica for edc. But overall, i love how sharp i can get the 14c28n on my leek.

M390(20CV, 204P) - Folders and smaller fixed blades

CPM 3V - Medium to very large fixed blades.

Honorable mention - Too many to list! So many great steels out there! Love them all. With Stellite 6K added(not a steel though)
