Favorite steel to sharpen?

It's 154CM for me.

I, too, think 440 does not give a nice bite into the stone compared to other steels. Also, some 440 blades are more slippery than most.
 
H-1, VG-10, AUS8A and N690 are tied for first, they get spooky sharp very easily and stay that way relatively long.

M2, 154CM and CPM S30V are number 2 but stay insanely sharp the longest.

ZDP189 is in a class by itself; usually on thin bladed knives with perfect thin edge geometry. Not as easy to restore to original razor sharp edge but lasts forever when it is ... would love to see it on thicker bladed knives like the Japanese laminates (ATS-55 sandwiched ZDP189 "San Mai" steel) but would probably take days to sharpen effectively.
