That question needs more detail!

What is your favorite steel for X application?

If you're on a budget go with stainless, but if you really want something outstanding go with surgical. In my experience surgical steel is best. If you get your hands on some good surgical steel you're in business. Stainless is good too, but it's not as refined as surgical.
 
My favorite steel is a good old fashioned carbon steel that easily takes a great edge, it could be 1075 1080 , 1095 / 1095cv , or whatever Mora uses but I really don't care.
I definitely don't care as much about specific steels as most people do, when I buy a knife I want to know weather its carbon or stainless but that's as far as I go.
For stainless I like bucks 420HC, and whatever Victorinox uses.
I don't think I'll ever buy a knife in one of these more modern stainless super steel types.

For Fixed blades - CPM 3V with a good heat treatment

s90v and m4. i like alot of other powdered super steel also, but those are my two favs.

Why do you prefer Carbon Steel? Is it ease of sharpening?
 
I prefer the steel that's on the knife I'm using at that time. That means I trust Ontario, ProTech, and CRK to put appropriate steel on the knives they make.
 
As I mentioned in another thread, CPM S30V, and VG10. I also like TruSharp surgical that Case uses. It takes a super sharp edge and seems to hold it.
 
Based on what I carry most of the time, I guess it's 420HC or the equivalent. Not that I particularly love that steel above all others, but that's what ends up in pocket most days. I don't use a knife enough to where the type of steel is major issue for me one way or the other.
 
Maxamet, M4 and Cruwear.

I have a hard time deciding when it comes to my regular usage since they will perform a days tasks without hiccup, and they all seem to sharpen "easily".

If I had to pick a more common alloy, it would have to be 52100 or 1095, though I do like the 1084 that I do.
