Second that - cpm 154 1/16'' or super thin in 1/32'' will be great for Kitchen duty which will be my main
purpose of use the Paring Knife.

I am liking how my Duke in 8670 is working out in the kitchen. CPM-154 would be a great option, but I think I would go with good old carbon steel.
