Is there a way to etch this without ruining it or will it patina in a similar way???

Be careful if you are going to etch damascus. You have 4 different steels in there.

I don't think you'll need to do either, as one of the benefits of damascus steel is that the stainless steel properties help mitigate the rust throughout. portions of it may darken a bit but the stainless layers will help keep it pretty clean overall.
