The Nessie I have is 1/8 tapered with a high grind. Considering I am in a frozen winter environment, I really haven't taken it to the woods just yet. However, I have been checking it out in the kitchen. I really like how the high convex grind on the wide 1/8-inch thick blade slices.
For a quick snack for my daughter and I, I made tuna salad with some sliced cheddar. The Nessie made short work of the pickle and onion, and it's pretty impressive to me when I can cut 1/16-inch slices of cheese, with a 1/8-inch thick blade.
Another dish I used the knife for was beef and broccoli with peppers, onions, and mushrooms over rice. The first thing was to portion a chuck eye roast I got on sale, and then slice up the meat and vegetables for the stir fry. The like the “S” shape this model has in profile, and I like having the forward swell in the handle to place my finger on for more control of the blade. The Nessie had no trouble with this one, and was fun to use.
At the time I picked up the roast, pork loins were also on sale, so I picked up a half of one, and portioned that for some loin chops and some stuffed loin chops later. The Nessie really does hold its on at a cutting board for a knife not purpose-designed for kitchen use, and is really just a lot of fun to use
