Field knife test

I used a diamond rod to throw a quick touch up, I'll get a pick of my field sharpening kit when I get home. It consists of a brown rod from my sharp maker, that broke, a round ceramic white rod, and my diamond rod. This steel is heat treated very well in my opinion, it responds well to just a smooth ceramic. I haven't had to remove any steel yet, but next month when we kill our two pigs will be the ultimate test. We butcher the old Hispanic way, the way my grandpa taught us. We shave all the hair off of the pigs. We put gunny sacks over the pigs and pour hot water, then shave them down. From there we split the fat down in sections, which is really rough on an edge. Not sure if you guys know what chicarrons are, but that's a Mexican delicacy. I'll have to get some pics, it's hard to explain. Better to see.

Although we butcher our own deer and elk, I've never felt confident to do our own pigs. My girl raises a couple for fair every year and we have the one that doesn't sell butchered (can only sell one). I'd really like to see how you guys do that.

On the D3V resharpening, comparing last batch 3V CPK FK to new batch D3V CPK FK, it seems to me that the Delta version both holds an edge longer and resharpens easier. I don't know why that would be, but the D3V seems to sharpen 'cleaner.' I'm not doing a very good job describing this, but have/had 2 3V models and 2 D3V models with hard use on one of each heat treat, and that's how it 'feels' to me in real world use. I can say without reservation that the D3V is more rust resistant than the last 3V.

Anyway, big congrats on the hunt, and thanks for sharing it with us. :thumbup:
 
My nephew was using a gso 4.1, and it held an edge no where near what my field knife did.
 
I tried gettin a shot of the drop tines on my buck, he had some really nice double drops on him. And hell ya, were gonna make a lot of jerky. As soon as it cools down more, it's going up on the line.
 
Wow, you guys don't mess around! Awesome hunt, I am very impressed. If you end up with a little spare jerkey, I will be happy to try some out! :D
