So it's time for fall walleyes and salmon but I use a knife similar to this to slice out the backstrap when butchering my deer, it works well for boning too if you don't mind a flex in the blade.
Forged from 52100 high carbon steel round stock
Heat treated to Rc 58-60 with attention to a fine grain structure throughout the blade
Flat grind with a hand sanded finish
Stabilized and dyed figured maple handle with brass and Micarta fixtures
Overall length: 12 1/4 inches
Blade: 7 7/8 inches. Yes it does flex but it isn't whimpy
Leather scabbard with a belt loop for a right hand carry
