I am with VCM3. Stiff Blade is the way to go for me. I believe it is what ever you are accustomed to filleting with. My experience has come from owning a fish store and filleting countless boxes of fish over the years. My knife of choice is still a dexter carbon steel fillet/boning knife.
That blade shape is beautiful, My only personal concern would be the guard (for lack of better terms) being that much lower than the rest of the handle. It could get in the way while trying to skin a large piece of fillet, by hitting the table.
