Pablo, I've been in need of a fillet knife for some time now. going to build my own but have not done any research yet as to the best type of steel for my project. Do you consider O2 to be the best for a fillet knife?

I consider O2 a good steel period. That said its good for fillet knifes if you don't mind the extra care needed to keep the rust off, otherwise I would go with AEBL or 14C28N. In my case, here in Argentina, its difficult to find these stainless in 1/16" thickness.
