Fillet Knife Suggestions?

Knives of Alaska makes a very good filet knife of AUS-8 steel with a rockwell hardness of 57-59. AUS-8 isn't exactly a supersteel but it takes a razor edge and holds it better than the generic "440" steel which most filet knives are made of. The sure-grip handle is absolutely great also-it's very grippy and doesn't slip or slide in your hand when wet.

I know a few charter captains on the gulf and they swear by Dexter Russell fillet knives.

Nothing fancy about them, but they make a living using them and that sold me.
 
I am not to proud to admit to using an electric, at least when I have a nice mess to clean. I use it for the first cut through the ribs, then I use one of several choices like mentioned above to seperate the skin from the fillet.
 
I know a lot of guys that use electrics and deny it. :D

I find that completely amusing. I caught my neighbor using his one day and could tell he was like embarrassed that I saw him using it. So funny. But hell, he must have had 40 fish there in a pile so who could blame him?

(Please don't freak on the number of fish. It may have been more than 40 but he has his own pond and pays to stock it so if he wants to empty it its his business)
