fillet knife

All fillet knives I own (7) are sharpened on both sides. The only one sided knives I have seen are Japanese Sashimi and chef knives.

I am not a knife maker but I did own a fish market. I have never seen a fillet knife only sharpened on one side.
 
Japanese grinds are one sided..............Fillet knives are two sided.
Sashimi knives ( ground on one side only) cut only one way ( right or left), with the slices falling away from the blade.
Fillet knives must sever the flesh (fish or meat) from the bone in both directions, and thus would not work well if they were ground on one side only.

I used to work in a cannery Filleting Fish and all of the knives we used were sharpened on both sides. (OOO Stinky memory)
