Filleting a Fish?

If it fits on the big ol'Weber grill it gets cooked whole :D
Well, most of the time...
Guts, gills & scales come off. A little salt and on the grill they go.
I've done trout in tinfoil with a slice of bacon on each side over an open fire.
YUM!

I've used all kinds of knives to remove fillets from the fish, but a good fillet knife shines when you remove the skin from the fillets.

These bad boys were filleted due to a lack of room in the cooler for the 100 mile ride home...

If it's got big scales, like a large striped bass or a redfish, one good way to prepare is to just fillet each side scales and all. Grill scale-side down while basting with butter and lemon juice.

Sure wouldn't mind getting my hands on one of those Busse fillet knives. Guyon, would you mind sending me one for testing?
 
I LOVE MY LODGE grill! i had it going hot last year in the winter, filled with BBQ briqutes, and i used a big alumin reflecting screen to keep the entire camp area warm (3 people) . We grilled chicken, steaks, chorizo, corn maaaaan it was good!

After the cooking is done, I throw a bunch of pine cones in with the coals and keep the smells going all night. The smoke with a good cask strength single malt and a cigar. How can it get any better?
The KOA filet knives have never let me down either.
