Finally a new GOOD Canal Street knife

Sandvik 19C27

Sandvik 19C27 is a martensitic stainless chromium steel with a high carbon content. After heat treatment the steel grade is characterised:

- Very high hardness
- Very good wear resistance

This grade is used mainly for the production of industrial knives for cutting synthetic fibre, paper and plastic films.

12C27 is good stuff, basically 440A. 60-63 would be right at the bleeding edge of its hardness, which will hold an edge well.
