Finding a hardwood or Burl handle

I am in the infancy of knife making. I have just nearly finished my second knife, I have a little bit of 800-1000 grit polishing to do and it's ready for a handle. I have some spare Red Oak but I am gifting this to my brother for his birthday and would like something nice to go on it. It is a camping knife modeled after the esse Mc 4. I need some ideas for a nice handle if anyone would be so kind.

Desert ironwood is beautiful and it's tough stuff, can take a beating on a camp knife.

Do I need to stabilize it or pore fill ironwood?
