Finishing the handles on pocket knives

I need some help with doing the handles on the knives when working with reconstituted gemstone and other materials. What is the best tool to cut the material with and how do you cut the material to fit the handle when working with several different materials on one knife with spacers. Do you leave the hanlde material hanging over and sand it and buff it? Any help would be appreciated. Im new at this but I just got to learn it.
