First edge with Edge Pro + 6000 grit tape question

So I finally got to take the new Edge Pro Apex 4 out for a spin. Went to Wally World and got a cheap 4 pack of steak knives for $5 to practice on, and I think they turned out pretty well. These are the first and second edges I've ever done on this system--up through 3000 grit tapes and finish on KnivesPlus strop block w/ green compound.

I was hoping someone that has used them could tell me if they can tell a big difference between the 3000 and 6000 grit tapes, and if they think they're worth it. I think supposedly the 3000 grit tapes are equal to 0.50 microns and the 6000 equal to 0.25 microns. I'm not sure what the green compound is equal to though.



 
I think the green compound is 0.5 microns. Try finishing with the 0.25
tape using edge trailing strokes only.

Who knows if these polished edges will cut a steak, but they slice and push cut phonebook paper like a laser haha. I mean, that's what knives were made for, right? To whittle hairs and destroy every magazine and phonebook in the house...not to be used practically as a tool or anything lol :p

I can't say for certain that that's what knives are made for, but I can certainly say that I know of no better use for phone books. It's 2014, if they could stop delivering those to me, that'd be great.

Do you mean finish with the 6000 grits instead of the strop? And can you tell much difference in sharpness/burr removal and polish between the two? Just wondering if they're worth the extra money for the glass blank and the tapes. I'm pretty pleased with how it ended up off of the strop, but just curious. :)
 
I think if you use proper technique it does make a difference.
In real life use not enough for me. I very seldom use the tapes anymore.
I finish on a strop with 1 micron diamond paste on one side and 0.5 on the other.

As someone who tried just a Sharpmaker with triangle Ruby stones to reprofile, got frustrated, then tried flat Moldmaster stones rubber banded around the Sharpmaker rods to reprofile, and again got frustrated...the Edge Pro is worth every penny IMO. Sharpening has went from mentally and physically exhausting to extremely enjoyable. I can get screaming sharp edges off the Sharpmaker and a strop; however, the majority of my knives seem to come more obtuse than 40 degrees and I like a 30/40 secondary bevel/microbevel.

I'd say if you already have the basics of sharpening down pat, the Edge Pro just makes it really simple IMO.

Amazing job! I assume you would recommend the Edge pro. Looking for a good sharpening system and thinking about this or the wicked edge.

Thanks, I appreciate it :) When I can get around to trying out some more expensive knives, I'll try and post some more pics.

Personally, I would recommend it but can't necessarily recommend it over a Wicked Edge. I haven't used the Wicked Edge so it wouldn't be fair to say one is better than the other. I don't think you could go wrong with either as there are pros and cons to both, and I have seen great looking and great cutting edges from both systems.
 
I can tell the difference between 3k and 6k when I shave, beyond that, I can use the edge as a better mirror with the 6k edge.

Just a note for those that use the 6k tape, do not use sharpie on the edge bevel, it's too sticky and will tear the grit right off of the tape.

Lot of people say serrated edges are best for steak. Until they use my highly polished slicer.

Looks good! Few can make mirror edges, so be proud :)

I am trying to start a collection of phone books because someday they will figure out everyone uses apps like Yelp and there will be no more phone book paper to cut!

What micron spray are you using with nano cloth? I like the .25 but worry about the diamonds dissapearing in the cloth. Those are tiny pieces of diamond. Russ
 
4 , 2 , 1 , 0.5 , 0.25 , 0.1 , 0.050 and 0.025 micron respectively. Polycrystalline. The nanocloth is designed specifically for the exceptionally fine stuff. 1u and below , it really shines with the 0.05 and 0.025 compounds as the nanocloth alone has no particular efect on the edge.

Its even thinner than the kangaroo which is already thinner than a quarter... Id post a pic but im on my phone.

I haent had to reload my 0.025 strop yet and i use it to strop my straight every day.
