First Impression: BRKT Canadian Sportsman 2

FIrst off, Holy Deuce! this thing is sharp.

Purchased the Canadian Sportsman II for a planned trip to Ketchican, AK where we plan to go fishing for Salmon and Halibut, nothing like that excuse to purchase a new huge filet knife.

We haven't gone yet but this last weekend I had the opportunity to help a buddy prep for a Scout fundraiser. They were serving Buffalo Stew so he needed help prepping buffalo roasts into cube size bits. About 70# of meat later that CS2 was still razor sharp, the blade geometry and the extra length made doing this chore a breeze. My friend had a much smaller filet knife, a Henckels from a basic block set he had around. He had to stop four or five times to spruce it up on the steel.

My CS2 is probably going to be promoted from the fishing kit to kitchen duty...it was that awesome.

However it didn't do so great on vegetables...does BRKT make a Santoku?
Can anyone reccomend a BRKT that would excel on veggies etc. ?
 
Yes they make a complete kitchen set with big Santoku and small Santoku. Big and small chefs knives paring knives and a carver. Very SWEET!!!!
 
My CS II hangs in my kitchen as well:D

Great filet knife.

They do make a Santoku. I'd go for the large one since the small one is not convexed all the way up unlike the large one. The small one is also a bit small for some tasks.
