First knife Design.

Looks pretty good, but there is alot of knife that will not be used for much from the guard to the cutting edge. The handle seems a little short. I really suggest making a mockup with wood or plastic. It wont take long and let you get the feel of the knife before you grind steel.

The first one is better imo. To echo what Patrick said, I would shorten the ricasso by sliding the guard forward a 1/2 inch. This should help solve both issues.

Your second design is very close to a popular style hunting knife I sell a lot of.

My only suggestion is to make the finger choil round back directly into the handle bottom without that projection at the front of the handle. If you want the finger grip projection, it should be under the first rivet. I wouldn't make it pronounced if at all.
 
Looks good, I dont like to have the nasty corner at the base of the blade, it is waiting to cut you. I would not put the choil as far forward and round that edge for safety.

On these shaped skinners, the forward position of the finger choil makes for better cutting control. It probably will end up a tad larger circle than drawn when he test the "feel" of it in shaping. The flat at the end of the blade keeps the sharp edge away from the fingers. I usually round the corner at the edge, as you suggested.
