I've been working on a pizza rocker design for a few weeks now, and it's intended to be my first real intro to knife making.

I'm a little hung up on what steel to use for this project. I was thinking about using 420HC, but do I even need to use that? Would a 300 series stainless suffice for this? Maybe there's other steels better suited to this that I'm just not aware of.

I'm still learning but I think you need a 400 series stainless to make a heat treated blade.

I don't think you need anything special for a pizza rocker but for the money 440c would be a good choice if you want stainless. Use 1084 if you plan on doing your own heat treat.

if you put in the effort to make it yourself, use a good steel.
No point is saving $2,- worth of steel and end up with a mediocre knife after investing all you time (and abrasives etc)

Heat-treated 440C would be a great choice for a pizza rocker - it's inexpensive, easy to find, very stain-resistant and every HT guy on the planet knows how to deal with it

If it's not hardened, the edge will end up all flattened out and moosh the pizza instead of cutting it.

before you begin making one you might want to look up mezzaluna knife. they are fairly common and cheaper than you can make .if nothing else it might give you some design ideas. good luck whichever way you go.
