I like 1095; coated or not. It's not difficult to routinely oil your blade to help protect it from corrosion, and it isn't horribly difficult to remove. I'll cough up some money for a good steel, but I really just want something that isn't going to cost me a fortune.
 
The only plus I really see from s35vn is that he can get it from the same company as 3v.
Yes, availability is one factor. The other factor I am looking at is working with materials I know can be heat treated very well by my heat treater. My main goal is to have tools that really perform, can take a lifetime of use and be a great value for the dollar spent. I can promise everyone now that whatever materials I use, I won't price them out of reach.

In that case, 35vn by all means as your stainless option.
