First time working with ss

I am making my friend a nessmuk style trout knife and he wants a thin (.094) stainless steel blade, I have only worked with simple carbon steels that I can ht myself so I will have to send this one out for ht I was thinking Texas knife supply but that would limit my steel choices i don't want to use 440. Is there anything special I should do because it is ss not CS I was going to grind post ht because of the thinner stock, is there a certain steel that would work best /should I look for some where else to ht. (sorry if everything looks jumbled up I am just writing questions as they come to me) I just need some advice/steel recommendations. Thanks
 
AEBL, CPM-S35VN, or CPM-154 would all do fine for a fillet blade. Aldo carries these steels in thin size. I use AEBL and S35VN.
