I always thought that if it was slighty thicker in the center when you sand it flat it gets a super slight rocking motion u dont see and slight sand the edges down and that can lead to a super slight gap you barely notice but is there. You reason sounds better tho!The main reason I do this is because it's much easier to flatten the tang if you don't have to remove so much steel. The other reason is that with the surface being concave, the bolts pull the scales slightly down into the handle making a better (and I think more stable) fit on the edges. This is an idea I got from S. R. Johnson's DVD on making a subhilt fighter, which I highly recommend.
