fish and game recipies

Take a venison steak (round or Chop) and pound it flat. I use a 9" cast iron skillet and get a 1" steak down to about 3/8"
Marinate in (your choice of marinade) for a couple hours. Cut a Jalapeno in fourths long ways.
Cut smashed steaks into 2" strips.
Roll steaks around the jalapeno pepper.
Wrap bacon around that and either skewer or toothpick them and grill.
It's a little work, but well worth it.

Wade, you forgot the two big pats of butter inside there beforee you wrap it up! :)

I'm not a big fish eater - :barf:, but I do enjoy fresh trout I caught myself while camping. As a kid, the only fish I would eat was grouper that I personally speared. :thumbup:

Well, butter doesnt keep so well when Im out and about. But you are right, butter would make a world of difference.
 
when im camping i take just add water pancake mix. makes great tasting cake/bisquits, and you can use it to thicken stews as well.
 
Bush Baked Rabbit. Rough chop an apple and an onion, crumble a slice or two bread, combine and stuff inside the rabbit. Stick the neck of the rabbit between the rear legs, and tie into a rounded shape with jute string. Lay some strips of fatty bacon over the bunny and bake in a camp oven (covered Dutch oven) in hot coals for a couple of hours.
Put some potatoes and carrots in the oven about 30 minutes before the bunny is done for a side dish.
Serve with a glass of an elegant red wine, (or a cup of tea if you don't have wine):)
 
Put a forked stick through a fresh 4-6" brook trout, sprinkle with lemon pepper, and cook over a open flame. You have to use a forked stick or the trout will spin when you try to turn it. You can always tell a trout is fresh because they curl when they hit the heat!

The only way i relate to this company is the spices i buy. Now i also always carry some when backpacking or camping. Realy good stuff.

One of the simplest and tastiest batters for fish consist of two ingredients, other than fresh fish. A bottle or can of beer and some flour. Pour enough beer into the bowl of flour to make a batter consistancy to your taste, then deep fry the fish chunks. Easy, quick, simple camp chow. Probably more fresh fish are eaten this way on Canadian fishing trips, than any other.

That's pretty much what my mom had for mother's day. Except i was lucky and caught a few in the 8-9" range.
 
I usually throw them back if there over 8 inches, I think the smaller trout taste better. Up in the Adirondacks, where catching them up to 20 inches in some of the ponds and lakes. Real beauties!
 
For us here, they are all just steelhead/ lake run brookies smolts. I let adults goes and keep a few little guys.
