Fixed Blade Knife for Hunting

Currently have a Knives of Alaska fixed blade (drop point) D2 steel knife that I carry in my hunting pack for field cleaning animals. I have a couple EDC knives that are Benchmade folders, one S30V, the other D2. Might just be me, but I feel that I get a bit finer of a edge on my S30V.

That being said looking for a nice fixed blade hunting knife something with a blade 2-3", not super heavy. When I was at a hunting expo there were some vendors there talking about the merits of damascus steel, and they took a knife and actually cut a small steel rod by hitting the knife with a hammer, surprisingly enough the knife blade wasn't chipped or beat up. They mentioned they have field cleaned about 2-3 elk before needing to sharpen it. Is this a load of bull? There is a knife company called Kestrel that makes super light weight knives, they have one available in S35VN. Also was looking at a ESEE Damascus Izula. Anybody have any insight on the Demascus vs S35VN? And hows do those metals compare to my current D2 and S30v knives?

Looking for something in the sub 3 oz range. Though I am absolutely in love with this benchmade knife, and if it was in S35VN or Damascus I would probably buy it. Would be nice to have a really nice fixed blade hunting knife that I could hand down to future generations...

Any custom knife makers that could make me a knife like the one pictured out of Damascus?
 
check out the knifemakers subforum or the exchange to get some names, but backwoods knives instantly jumps out. check out the d2 doziers at ag russell as well. people talk about breaking down three or more elk with his blades,and not needing to sharpen them.

Modern damascus is just more than one steel mixed together. It never ends up with properties that are greatly different than the quality steels it is made from. However, most damascus blades are made of carbon steels, which have some nice properties for cutting. They rust, but not overly since they usually have a patina already so you can see the pattern.

Check out Alabama damascus. They have sharpened blanks that just need a handle and sheath to complete, for rather low prices:

I've never owned a Damascus blades so I couldn't comment on those. The biggest problem you might find based on your criteria is the sub 3 oz range and a handle that is comfortable (unless you have med/small hands).

That BM pictured in S30V and 3.5 oz might be hard to beat.
