Fixed blade knife help

Maybe check out Bark River. They made this one for a hunting sports fund raiser , so I don't know what model it is.

Knives of Alaska camp bush knife. And crazy though it may be, the Tops Fms in both sizes may work for you, also the Tops Earth skills blade is fairly thin, though might be overly long.
 
For a nice thin Buck knife. The 121 Fisherman is really nice. Similar to the 105 or 118 but longer and thinner. The 121 is discontinued but readily available used.

I think you’d do well with the BK62. It’s a real nice knife.
 
For mushrooming and general gardening - no joke - the Cold Steel Black Talon II is amazing. The giant hawk bill and chisel grind are SO sharp, I can effortlessly prune anything up to 3/4” thick. Peppers and Eggplant have some of the toughest stems that even my garden shears sometimes struggle with but the BT2 (if I keep it factory sharp) is simply amazing. Probably overkill for just mushrooms, but your common garden snake will be scared away by the glint of the polished S35 alone! #TacticoolGardening. ( Also Boker makes a $25 bone-handled, old school slip joint hawk bill that‘s a neat little beater for mushrooming. I believe it’s in their “Tree Brand” line.)
 
The Mora Eldris might also be a fun knife to have for mushrooming , and it’s super fun to carve with. Obvi not a primary knife, but I love having it around for $20
 
I think a 3.5" blade is long enough to do any of those things. I would also think about the delicate action of harvesting mushrooms and if I want to do it one-handed how a heavy knife would make my hand tired.

Also, I think people hunt with puukkos (no finger guard) and they simply learn to do it in a way that does not result in injury.
 
I am thinking of buying the case 5" - the architect field buddy 5.5 , and an early buck 121 that should come in just at or over 300$ and one of those three should work well

I probably wouldn't have suggested it for a mushroom-specific mission, but the OP did say:
"Ability to fend off bear or cougar ( .0001 chance)", and "Occasionally lopping off blackberry vine across trail".

I just bought an early buck 121 on eBay. Looks to be in good condition. Stamped "Buck usa" read with tip down

Paid a total of 72.10 with shipping. Idk how to post pics

I believe as a two liner stamped with the tip down it should be about .058 inches thick.

Should work excellent harvesting mushrooms, filleting fish, whacking the occasional blackberry vine, etc.

Now I'm gonna find a case 5" to order

I appreciate all of the helpful suggestions! Thanks especially eveled. I hadnt even known of the buck 121 but its fits perfect and goes well with my vintage buck 103. Cant wait till it shows up in the mail oct 6th EST delivery : )
 
White River Sendero Classic. I just got one and it’s awesome. I could see it being my only fixed blade.

A ton of good knives for this sort of need, made all over the world (Spain, Scandinavia, Italy, El Salvador, Canada, etc). For American ones, Bark River has a pretty good selection with models like the Bravo (1 or LT both come in 3V steel), Trailmate 2, Gunny (LT or CPM), and Aurora (or Mini Aurora). It really comes down to any number of preferences to decide on the right one. I love my Bravo 1, but it was a tough decision between that and the Aurora or Gunny.

Benchmade Bushcrafter and Leuco models wouldn't be a bad idea either. I'm starting to warm up to the idea of getting a new ESEE 3HM or ESEE 4HM if they make it with S35VN, like they do with the flat handled ones. I'd be pretty tempted to pick one up when they do.

As far as cougars go, you'll just piss it off if you stab it. You're best option would be to hit it in the head as hard as you can, while you still can, with a rock or pommel. Cats have fragile skulls, cougars included. If that fails, you can always hit yourself on the head as hard as you can and hope that knocks you unconscious...
 
White River Sendoro Pack knife, S35VN steel, the blade-designed by Jerry Fisk...my recent choice after many previous smaller fixed blades.

 
I ended up making several purchases... Buck 121 between 67-72 - case bone handle with gut hook case 5" skinner and case 5" hunter all 3 cases have the bone handle. Now im looking at a custom stag handle buck 102.... And maybe a velvicut boys axe and dandy saw....
