I give this a plus 4 vote. I've had four Guardian 3's. Love 'em in M390 for your use. Carry on crossdraw holster, leather, although perhaps Bradford has a carry option that doesn't mind the water.
 
A Grohmann #1 Original or the #3 Army maybe with the flat grind option. No kydex sheath option though.

Mora. As others have said: cheap, stainless, will get the job done. Reprofile the tip if you like - won't cost much either ;)
Did that with my mora 2000. Love it.
