I like the looks of those GEC covers CharlieThere are a lot of Sheffield knives from the World Wars era, that have bone handles textured like a basket weave or rough checkering!! It sometimes resembles Tweed, or a coarse wool weave! Some collectors of knives (who you may know!!!) have found the name Flat-Cap Jigging to be appropriate, referring to those ubiquitous English Caps that are popular around the world!!View attachment 2756332

Ok...a little "out there" but the older - say 70's Japanese Jigging is very "checkered" in the plainest manor possible, but this is a Parker Japanese Knife for Sears, probably some of the nicer Bone from Japan in this manner- and when you look at the diagonal "Striking" it is similar to a larger type of Flat Capping ?- yes? - no? Just thought it may have been worth a mention and look....

David ,The first knife I ever bid on eBay was a Wostenholm that looked like yours on the right. I didn't win.
My flat cappers are a step routed 4 1/8" Rawson Bro. and a 3 7/8" Ibberson where Stan Shaw made a few of these.
