Olamic 24/7 is a great value secondary typically selling in the low $300s. If you're patient they show up. I wouldn't spend 550+ on one.
My 24/7 was great and they are easy to work with. They anodized some screws the way I wanted with no issue at a fair price.
If I'm not mistaken, I think their blades and some other parts my either be fully finished or partially in Italy(?) and then fully completed and assembled in California.
Shiro is that next level. Only recently in the past 3 to 5 years have they become easy to get. Before then they had almost no network in the US. For me, they were more special back then when they were more elusive. That's said, they're machined perfection! Find one you like and buy it. They hold they're value better too. You never know when you might want to sell. You'll still take a loss for argument sake, but not the 50% cut you might with an Olamic.
Both are great knives, but Shiro is a different tier.
