A not-so-artistic canister of pepper spray is definitely the best thing she can have on her person for self defense. She will avoid legal trouble as well.
Besides, using a knife (maybe lethal force) on someone is not something she's going to do and forget.
 
Besides a sak maybe a opinel or peasant knife. People tend to freak out less around those knives so it would be something you could pull out and use in a school setting.
