What is the name of the company that sells the variable disk sander and is it what would make it faster to get things flat?
Would it be better to by a surfice grinder?

JRH, A disc will get each side flat, but a surface grinder will get them flat and PARALLEL, which is crucial in folder making. It's even better if you can set it up to use 2x72" belts.

how about 2 disc grinder vfd side by side on a table that has a lever to bring then closer or farther apart--marekz--instead of 2 2x72 side by side????????
 
Typically you dont need to take much off to get pretty flat, I use a granite block with 220 grit glued down. Mark the surface with a marker and rub with light pressure until all the marker is gone, rotate the part to make sure you sand evenly. No way this is as precise as a surface grinder (on my letter to santa) but works pretty well. Using a grinder you need to be carefull because its easy to take more off one edge or end making it non-parrallel as discussed.
