Folding chef knife

I was wondering what one of those health department inspectors would think of a folding kitchen knife laying out on the counter while they were doing one of those yearly visits? I bet it wouldn't go over too well. I would still like to have one for camping or around the house. The AG Russell Hocho would be my pick:)
 
I'm pretty sure in NYS that a Stainless Steel Blade and a non-wood handle is all that's required... but, if it's not, all you have to say is "that's my personal pocket knife, it's not for food prep, I was opening a package of paper towels (or any other non-food package)".

I apologise for being a bit disrespectful to the Hocho, I just wanted this knife to have more of a high end feel to it, more like a custom.

Warthog, 70% of my knife usage is food prep, and often when visiting friends we get asked to help around the kitchen. Most of them don't realise that a knife only does it's job if it has something resembling an edge

The best compromise would be to pack a knife roll every time we travelled, but that isn't practical.

Basically what I'm looking for is some sort of folding Global ,Henckels , or even a fibrox handled Victorinox.
Heck, Victorinox allready make good folders and kitchen knives, why not combine their skills ?

The A G Russell Hocho blade is indeed thin and an excellent slicer. For what you would like, you will find that it is too short.

The handle is VERY uncomfortable. I can't really recommend a knife with such a poorly designed handle.

On the custom side - look at a knife like the Mike Obenauf Large Model 1. It has a dropped bolster and deep blade. The blade length approaches 4 inches. I have been considering approaching Mike to try and do and even larger blade with the Santouko shape.

Ahhh I see now....wouldn't want to use a sh*tty knife:D:D
 
Personally, I enjoy the Chinese folder asa cooking knife, but the Military is also a very good folding chef´s knife!

Personally, I would not use a folder for food preparation. They are far too difficult to clean and eliminate any microbes or toxins.
