Asian markets also sell lots of dried foods/vegetables as well.

That is a likely my best shot. Although they won't have Minestrone which would be my choice of a dehydrated food that I can rehydrate and enjoy. Shotgun I'll check my soup Isle but I don't think I'll find what I'm looking for. Maybe the stores you have are different in Oregon. Although I do have a great selection of stores where I live including Trader Joes, Whole Foods, Fresh and Easy, Food 4 Less, and the like. I'm a foodie and shopping for food really sucks for me. I actually like shopping for clothes and camping gear. But food? It sucks. I have to go to a butcher for meats, here for processed frozen food, here for chocolate and condiments, it's like five stores total. You would think there would be one or two stores that have it all. But alas there is not. *sad face*
 
In my food bag I carry a small nalgene container of salt, pepper and sugar. sometimes a little container of seasoning salt or lemon pepper are nice if fresh fish or small game might be available. On longer backpacking trips I also usually carry a refillable tube full of peanut butter, I just can't get enough of that stuff.
