check some of the other blogs, lots of good info on that page. there's a "canning nerds" group on myspace too... i'm not in it, but there are a few recipes and such.
 
Nice thing about the weighted valve types is that there is nothing to go wrong.

Over time the small port that the weight sits on can get stopped up just from over-boils from the jars and when that happens, you have problems. :D

When canning, always check your canner each season and make sure it's clean.

Over the years we have come up with some of our own canning times that have worked out really well. The canning books tend to err on the side of safety, thus making some foods, such as potatoes, too mushy.

Pickled eggs are amazing...I love those things.

They can be very hard to pull out of the bottle....You get your fist stuck in there....You don't want to let go of the egg....What to do????:D

AND i had a total epiphany today! if we had had a pressure cooker and canning jars when the hurricane hit i could have cooked up all the meats in my freezer and used them in food storage! dammit! lol i for sure wouldn't have had to give that soulless B*tch across the street the brisket. :grumpy:

ETA: ohhh I forgot! we bought a case of MRE's today. $80 for 12 meals and they're the ones w/ the heaters in them! SWEET! we're gonna buy 1 a month so long as they have them.

Pretty good price... only thing... they ship them in their own loose filled boxes... So if your into orginazation you need to get some 10x11x16 boxes made up. I gave a guy some cash to cut some up at work in the shipping department... looks just like the originals. There are a few threads over at ARFcom about armygear.net and this promo..... so be it the promo has been going on for several months... Received 6 cases from them back in March, since I was still overseas... the girl had to haul these things into the storage room... the paired up boxes weigh 42lbs each. She was not happy at me... guess she just does not understand it all.

I just felt safe doing the large quantity purchases. Like stated before I started light and just kept going. Here are a few photos I took about a year ago (taken just a few days after opening the cans noted open). Also like mentioned before I have food at 2 other lcoations. The 2nd location has probally a little more of just the long term 20+ year stuff. A few cases of canned goods since we only get up there a few times a year. For the last 2-3 years I have been getting questions from extended family on how to prep etc. As such for Christmas last year I made sample prep bags... a few differnt manufactures of MREs, some MH bags, a few bars of mainstay, a few cans of butter and cheese, a copy of the SAS survival guide and a CD with a bunch of complied beginner survival/ prep/ outdoors info. They were very well received. I know my uncle and 1 cousin has taken to prepping like a seal to water. After getting back stateside in April my uncle did a family dinner, I walked down stairs to get some canned veggies liked asked and seen a wall of food.... holy shizzz. I just smiled.

I use a few cans of the food below thruout the year for camping/ hiking/ etc. Instant refried beans, powdered milk, eggs, FD and dehydrated veggies/ fruit and such for freezer bag cooking. So I am constantly adding to it all. Not shown are the MREs, pantry items, and water... oh the joys of maintaining stored water. I almost strickly store water in mil water cans. They are bomb proof, relativly easy to move which aids in emptying cleaning and refilling, and if needed I can take them with me... have a little over 30 stored in the house.

I need to get into canning, wish my grandmother was still alive, she canned everything... its a art that is becoming lost.

i have 2 closets, under my bed, under my mil's bed (both king size), and a coffin sized coffee table FULL to the brim w/ food.

i just had to reorganize under both of my bathroom sinks to get the shampoo, body wash and soaps. DAMN when the SHTF we gonna smell good! :D

though born and raised in texas both parents are pure coon ass....I was raised on quail gumbo,,,,and yes grandpa kibodeaux put the eggs in the gumbo too.....Damn it Jeff you makin me hungry.....I am gonna have to drive 2 and half hrs to my grandpa's now for his gumbo.....Speakin of old coonasses.....don't you love how when you are eating at there house they stand over ya say "that's good huh sha that's good...." and when you reply yes it good you get in response....Yeah i know i made it.....Love the grandparents......Got to take care of this one he's the last one left.....

Top middle in the photo above.. its good stuff... I did a write up on ARFcom about 1.5 years ago on it. Made a scramble with powered eggs, onion, peppers and yoders bacon, also tried a few pieces straight up, cold and hot, then BLTs for lunch, for dinner, butterflied deboned chicken with pearle onions and bacon. Still had WAY more than 1/2 can left... was baconed out at the end of that can. HAHA.

only thing bout it is that the bacon is cut pretty thin. When it gets chilled the pieces stick together like a pair of pants on Megan Fox.... Except the bacon is hard to seperate.

drew i have a feeling i'm gonna be eating many more "new" things if our family keep bbq'ing and camping w/ ya'll. i've never eaten quail or quail eggs. :o

It is the Coonass culture....they ate whatever the could catch and just had to find a way to make it taste good.....wether it be coon, snake, nutria, gar, or any other odd thing we know how to make it palletable....;)before long the shotgunner family with be honorary Cajuns.....P.s have ya'll tried any more boudin:thumbup:

i think i just threw up a little in my mouth:barf::barf:. i will NOT be canning any of those things!

haven't eatin boudin since you made it. we did like it though.
