forged in fire

Hello I am new to knife making. I wonder why on forged in fire they quench but never temper yet the blades don't brake? Just wandering!

This is discussed repeatedly on the multiple other threads regarding the show. Tempering takes several hours and makes for boring TV and is done off-air.
