What about using turks heads spaced about 1/2" apart using a thin cord showing the bamboo in the spaces between the T.H's. for the handle. Dye the cord a color just darker than the bamboo. The TH's would add just a little more bulk to the handle and those would make a great set of steak knives. Maybe some black ebony for a bolster and pommel, real subtle like. Man I like those.
